Woohoo it’s week 2! Let’s get to it. I think I hit the pandemic wall last week and was a bit down. It all seems so gloomy but there is a way out. I’m comforted by the stats going down or at least levelling off.
2 of our family have had the vaccine
I have had the first dose of the vaccine and now my Dad has been vaccinated, so that is really good news. My Mum and my husband’s parents should follow soon after.
I completed some home projects
It may be small, but I’ve had these two glass bottles since the summer when we bought drinks in them and I wanted to make them into oil bottles. I got the labels just before Christmas and I’ve finally finished them off. I’m really pleased with the way they turned out.

I also made Kale chips which I’ve been meaning to do for a while and they turned out really nice, like crispy seaweed you get from the Chinese. You just trim off the stalks, spread on a baking tray, sprinkle over some sea salt and drizzle with olive or vegetable oil. Bake at 180 degrees C for 8-10 minutes. They make a great low-calorie snack or side dish.

I find I do better if I feel like I’ve achieved something in the day. This can be tidying an area, doing some washing, or something more involved. Once I’ve done my freelance work for the day and the children’s homeschooling I try and do something like that.
Positive news stories
A group of school children clubbed together to buy pizza for nurses at their local hospital. One of the nurses was in tears as she had barely eaten that day. What an amazing display of kindness.
