I first saw these mini apple pies on a video on Facebook and I had to make them. I adapted them to suit my tastes and for UK measurements. They were super popular in my house and were gone within 2 hours. I will have to make more next time for sure. They come out so moreish because they are bite-sized that one just isn’t enough. You can serve them as they are or with ice cream or cream. I like to sprinkle icing sugar on top for that added bit of sweetness.
Apple pie bites recipe – UK measurements
Makes approximately 15
2 large cooking apples, peeled and diced into small chunks
115g brown sugar (I use light brown soft sugar)
half teaspoon ground cinnamon
1 tbsp cornflour
2 tbsp Butter
1 pack of shortcrust pastry or make up pastry
1 egg, beaten, for brushing
Icing sugar (optional)
Ice cream or cream to serve
Equipment
Cookie cutter, round or crimped if you have one
Saucepan
Wooden spoon
Baking tray
Greaseproof paper
Fork
Method
- Pre-heat the oven to 190 C or 375 F
- Add the brown sugar and cinnamon to the diced apple
- Melt the butter in a saucepan and add the diced apple mixture. Cook on medium heat for 3-5 minutes until softening. Stir regularly to avoid sticking
- Set aside to cool whilst you prepare the pastry
- Cut the pastry block in half and roll each half out into a circle, making one circle slightly larger than the other
- Spoon the apple mixture onto the pastry with a teaspoon, leaving space in between each spoonful
- Place the second pastry circle over the other one and the apple spots
- Grab your pastry cutter and cut around the two layers of pastry, sealing the apple pie bites. If you don’t have the cookie cutter you can just cut a circle round
- Use the fork to crimp and seal the edges further
- Brush the tops with beaten egg, cut vent holes, and place on the heated lined baking tray
- Bake for 15-18 minutes until golden brown
- Sprinkle over icing sugar and serve with cream or ice cream to taste
